Lanzarote Recipe – Tortilla

Here is the recipe for making a Spanish tortilla (potato omelette), this is great to serve up as a tapas dish or as an accompaniment to meat / fish or just in a bocadillo with mayonnaise or alioli.


250g potatoes

2 eggs

Half an onion

1 clove garlic

Fresh parsley

1 piece of chorizo

Half a red pepper




Peel the potatoes and slice and fry them. When they are soft add the onion, pepper, garlic, parsley and chorizo finely chopped and fry until they are cooked but not crisp. Add the eggs beaten to the mixture, season with salt and cook in a frying pan with a little oil until done underneath. Put a plate over the frying pan and tip the omelette onto the plate then add back to the frying pan to cook the other side.
